The Hit Man franchise is entirely built around planning out elaborate murder-for-hire scenarios. 

One could easily count any open world game which allows one to kill at random or as part of a sub-quest such as the Fable series, The Elder Scrolls series (Dark Brotherhood missions), the Fallout series or the Grand Theft Auto series.

With skyrim and the devourement mod you could kill a person and then eat them to cover your tracks and later poop what's left of them on the ground somewhere.
