I followed some the guides that were posted here earlier and the final product is seemingly perfect but regardless of whether I replace the Mnc nifs or the ABC nifs they just stay invisible.  This occurs regardless of whether i use a slow and steady approach through nifscope or the really simple way with Outfit studio.

When you replace the nifs, do you rename them so the names are the same?

 

Like, if MNC calls its Hagraven a "HagBabe" then any hagraven replacements will need to have their nifs renamed to "HagBabe" since that's what MNC is looking for.

 

Another way would be to open up the MNC esp with creation kit and point the nifs to a new location. Usually in the armor addons, you'll find the MNC monster you want to replace and then point skyrim to use another monster model.

I use the same name as the original nif, I'll look into that CK armor addon thing, although that doesnt mean i know what i'm doing I'll likely grope around and either i get it or I dont.

Here's the issue

Not sure how/where it happened during the process but the skinning got royally screwed somehow. Outfit Studio hates creature skeletons for some reason so something probably went wrong there if you imported the giant model into it at all.
