I am sorry to disagree but if the lengend is to be plausible, a succubus must resemble a human, or they couldn't lure men, that when seeing something like that, will just run away. But again, this thing is a legend, so everyone imagine it as they wish. Just look how many interpretations of vampires there are in books, comics or movies.

It is hard to go to wikipedia for something so old and with so many representations. If I remember well, I even saw in wikipedia once that one of the popes said that he had a friend succubus, that helped him deal with things. But, I am no historian to say if he said such a thing or not. It is just more plausible that it is attactive and human enough to lure men if she invade dreams, something as you picted would quickly turn this dream into a nightmare (assuming it exist of course). 

 

I just know more or less how the legend began. First it was Inccubus, that in dream had sex with women and get them pregnant. Of course it was not dream which did that, it was a man, but the girl couldn't say she slept with him, so they created a monster that get women pregnant, another girl passed by the same problem used the same story she heard, and there goes. But there was still a problem, the child. Once born, he would look like the father, and so Succubus was created. She would invade men dreams, have sex with them, collect their sperm, give to inccubus use it to get ladies pregnant (as excuse that demons don't reproduce, really fits the legend).
