That largely depends on what you mean by:

Because I guess you didn't remove the mods from NMM before uninstalling NMM, so now your current NMM doesn't know what was installed in your previous NMM install. Why did you uninstall NMM to just go back to install NMM?

At this point you should try a clean install (uninstall the game, delete any remaining files and install it again) and start adding stuff to whatever mod manager you want to use. And don't remove or change things if you're unsure of the results.

That's cool, but for what I've read about NMM, it doesn't have a clear way to detect mods that are already installed in that Skyrim install. You could try something like this (it sounds like a complete reinstall tho, so I don't see the point for not starting from a clean game and doing this properly).

*remaining files will be in "...\Steam\steamapps\common\Skyrim" so deleting that Skyrim folder should be enough. Then reinstall in Steam to get a new copy of the game.

So you have 200 mods but you decided to uninstall NMM to free up space? Interesting approach. Just out of curiosity, how much space did you actually reclaim? ?

Ah, I'm with you now. You also uninstalled all the archive copies NMM uses. Me being an idiot, I forgot about those.

I made the jump to Vortex a few months back. Not the smartest move I've made and I would go back to NMM if I wasn't so lazy that I can't muster the enthusiasm to reinstall 300 mods.

funny 'cause i do the same, i do the jump (what an error), swap every mod from NMM to Vortex, then after some week i telling myself "fck vortex suck" so i redownload again all my mod into NMM :) i lost like 10 day for redownload everything

edit: i still have one question, how can i be sure if skyrim unofficial patch is downloaded (we are ok it's not https://www.nexusmods.com/skyrim/mods/71214?tab=files) ?

Sorry, I don't understand what you are asking. Assuming you are running Skyrim LE then that link is the correct mod. It downloads and installs just like any other mod.
