How to make Skyrim more peaceful?

I decided to return to Skyrim again and I want to make a completely different approach towards gameplay - I wish to make Skyrim much more peaceful! Is it possible?

(I played a monk character with zero kills, that's not what I want with this). 

 

When I say more peaceful I don't mean completely pacifistic.

What I would like to be able to do examples:

 

● When I fight someone and bring their health to zero, they don't die but go into submission, give me opportunity to take their weapons and leave them to live another day. However, if I ran into really evil dude I still CAN kill him after submission if I decide to.

● It would be cool to be able to take a prisoner (a beaten into submission enemy NPC), not as a sex slave but as a prisoner and then give him to city guards and place them in prison... or something like that. 

● animals don't attack me unless provoked (e.g. if you come to close to bear he attacks, while trolls attack as usual)

● Living things care for their lives - if their health drops under some level they start to flee, and once they run away their flight state of mind lasts much longer that vanilla 

any more ideas...?

There is a speach tree overhaul mod on nexus that lets you negotiate with enemies. Give em some gold and they become friendly for long period of time. If they are in bleedout state you can spare them. They will reward you with gold and become friendly. It works realy well. I played imperial with super high speach skill and was converting bandits left and right.

 

For animals there is a mod that lets you set every animal type to friendly or agresive as you want in mcm menu. So you can be friendly to wolves and sprigrans for example but trolls will still atack you.

I've been testing this mod out for a while and it pretty much does exactly what you're looking for, and i've encountered no bugs so far:

Trolls, Sabrecats (edit: i think the agression range of Sabrecats has been toned down though so they don't come at you like a heatseeking missile from miles away) and Spiders are still giant douchebags, Wolves and Bears growl at you until you piss them off and skeevers scatter and run away like the rats they are.

It might not be necessary if you're playing a lawful good character but "Timing is everything" lets you turn off Hired Thugs and Hired Assassins as well as Vampire attacks and the like.

Wow! Thank you very much guys for this awesome response! 

 

Defeat, Submit are on my must-have-list from now on! One with nature, I completely forgot about this one, it is back on the menu! Timing is everything as well! 

 

So for immersion and realism purposes here is where I stand for now:

SkyTweak - with this I heavily tweaked damage output and input making it easy to die from 1-3 hits if not wearing any armor or wearing extremely light armor. Heavy armor makes you die from around 10 hits max. Successful blocks block 100% damage but drain stamina. Health regens so slow that you need to eat and rest to get back in the game, etc...) This settings combined with Defeat and Submit will make Skyrim replay truly a unique experience. Now I know that I won't just use quickload and try to kill enemies again; with these mods I know that every fight might have severe consequences for my character so I'll think twice before rushing into bandit camp or worse. With One with nature I'll make animals behave more realistic, especially the wolves whom I observed several times in real life and they behave nothing like in Skyrim. With Timing is Everything I'll postpone some random encounters that might force me to kill. Ordinator with its complete perk overhaul makes everything feel brand new again. Campfire Complete Camping System with Frostfall 3.0 will make every hike into an intense experience. 

 

Now I will really think twice do I want to risk getting into combat, or simply try to move without being seen.
