I read through the information about him available online—his "biography"—... it says -> that he was trained for many years at "High Hrothgar" as a future GREYBEARD.

 

What vocal magic can the "Greybeards" use particularly well (which they also teach the player)?

1. "Relentless Power" - a scream that knocks the opponent over with a sonic pressure wave -> knocks them over and STUNS them (remember the heads against "higher Draugr")

2. "Whirlwind Dash" - a scream that propels the user to the intended target at an insanely high speed

 

Why, in my opinion, did Ulfric use these superior abilities?

I don't know where and when Ulfric is supposed to have trained his sword fighting skills in "High Hothgar."

Ulfric would never have had a real chance in a "king versus blade" encounter against Torric - who had spent his life as a nobleman (and warrior) training his skills in weaponry... but Ulfric has spent at least half his life training his "voice" - so that he is on par with the "Greybeards" can act.

 

Strictly speaking, Ulfric is a "Greybeard" - one who left the monastery to actively interfere in worldly affairs.

Ulfric was literally a soldier in the war against the thalmor. he likely got plenty of experience in using a blade.

Ulfric is the leader of the Stormcloaks and a Jarl... because he's a nobleman.

So he didn't even have to fight his way to the top - he rose straight to the top thanks to "his blood" (son of a Jarl).

 

Ulfric wasn't a "soldier" in the war against the Talmor... but rather the troop commander of the Northern Relief Force.

As the leader of an army, he doesn't necessarily have to be a good fighter with a sword or battle axe... that requires entirely different qualities (management!) - which he certainly has!

 

His true value as a fighter, however, isn't his sword arm - but his indomitable voice... as he impressively demonstrated during the reconquest of Markath.

Even the "King of the Forsworn" pays him (gritted teeth) respect for that!

 

And he would have been allowed to use this very "voice" in a duel against an opponent who lacked this ability????

There is no mention in the game that Torygg accepted on the condition the voice would not be used and bearing in mind a simple gag applied by the imperials prevented Ulfric shouting his way to freedom in the vanilla intro its not like he couldn't have accepted the duel on the condition that Ulfric fought gagged to prevent any voice being used

 

So he accepted a fight against someone he knew had the voice so using the voice is perfectly fair, if Torygg had been taller than Ulfric or had longer reach would he have to have fought bent over or with a shorter sword? No , If Ulfric challenged a mage to a duel would the mage have been expected to not use magic? No

 

Torygg could have declined the duel (citing the voice or not) and lived with the loss of respect/honor/position/whatever other consequences

 

While dueling isn't something in our culture anymore "fairness" was never a part of it, do you think two noblemen had to take a shooting test before a duel with pistols was allowed? Or fencing test before swords could be used? And were handicapped based on the outcome?

 

Someone with zero experience could face someone with decades of experience if the social positions were close enough that society of the time allowed that one had the right to challenge the other
