only partially. All those details of body (shoulders arm length, waist size, hip size, thigh and calf length, foot size, etc etc etc0 play into it too. the only thing I've found that the height equalization does (for humans) is to get you closer to a lip on lip kiss. 

 

I guess you should check the SL MCM and look for player hotkeys.

there are still presets. Or I should say, there is still a presets section.  examine your Racemenu closely. Unless the current version has eliminated it (which I find highly doubtful)  it should be there. As to the actually loadable presets, that's al up to you, either from making them yourself or from downloading ones compatible with your head and body models.
