As far as I know nobody has integrated this sort of mechanic into skyrim's combat (probably not possible without scripts, anyway). But I'm sure there are probably poses that resemble these weapon stances. 

 

In Dark souls there are numerous kinds of stances- Longsword/Greatsword (shown in video), Katana (iaijutsu pose), Ringed Knight Sword (sith lord esque lightsaber position), amongst others. What pose packs include such poses?

I don´t know any mods, that do exactly what you asked for...

But have you tried this:

You can easily switch ingame holding animations.

Use a greatsword like an 1handed sword, together with a shield...

then next second switch to hold like like a greatsword again,

or even duel wield them...

Fully integrated in the combat system.

...however you like with easy hotkey system.

 

It comes as close as I know...
