One area that was crashing a lot for me is now loading (ie. stepping outside from the Captured Dreams shop). It could be I'm just getting lucky. Is there any areas or methods that are good to stress test all this? I'd hate to get involved in a save only to find out I'm still having issues.

For just the game in general, just attack a guard in a major hold, toggle god mode if you want to try and ride it out until the end. Depending on what mods you have this'll launch 10-20 NPCs into combat and is probably one of the most intensive things you can do in the game.

I may have as well try that for fun, but mostly I'm thinking of save loading. If I'm correct, it's probably best to use a location with a lot of NPC's, as I imagine that puts more stress on the mods having to run a lot of code on all of them, rather than a location that's simply big.

I may have as well try that for fun, but mostly I'm thinking of save loading. Maybe there's an intensive location that's hard to load. Hard to say exactly, it also depends on load order. Riften is one of the more heavy cities for me, so if it is for you as well, save the game in the middle of the city during the day, close the game and try to load it. Other than that I've heard riverwood is also quite an intense location, maybe even solitude. I'd also suggest testing out saving at bad times, like during combat. Maybe even fuse everything I've said. Attack a guard in a hold, when you've got a few chasing you, save the game. Close. Then load it up.
