Suggest me extra bosses/treasures/gameplay changes

Hello guys

So I started playing skyrim again but I can't get immersed in it like last time and I keep quitting even though I really want to play the game. It just feels boring to me. 

What mods would You suggest me to install to add some flavour and colour to my game?

Mainly I'm looking for extra bosses or named npcs that will make adventuring dungeons an interesting challenge again. 

Also new artifacts, items, and collectibles would be nice as I like to collect epic items. 

Maybe some refreshing gameplay changes? I have really no idea how to spice things up.

And maybe a visual mod to add more lively colours to my game but I can't handle any enbs as I have a slow computer.

So please if You could post some suggestions of Your favourite mods that will help me come back to skyrim I would be grateful.

Interesting NPCs: http://www.nexusmods.com/skyrim/mods/8429/

Loads of uniquely voiced NPCs. 26 full quests, with some with very challenging bosses, all of them with great backstory and plotlines. There are more misc quests than I want to even try counting, so it'll add a lot of surprises that make the game feel new.

Now merged with Immersive Settlements. It expands every major city, every village, and a few junctions too small to be called settlements. Also includes texture improvements to make each area look better and more distinct. A few quests have been added, with more planned. I use this on top of TAVE (http://www.nexusmods.com/skyrim/mods/17406/) and Dawn of Skyrim (http://www.nexusmods.com/skyrim/mods/58275/) Collections, both add a lot of details and visual enhancements, so my game looks very different from yours.

immersive creatures and immersive patrols there; both awesome. creatures in particular, doesn't get as much recognition as it deserves maybe.

interesting NPCS adds a lot of voiced new NPCs/NPC content.

then there are various combat overhauls which make fights less trivial, lots of texture replacements, and ENB graphics which combine to make it look awesome, plus a lot of armors and clothes including HDT add ons (having some hair moving, plus a few accessories and the relevant body parts moving, brings the game more to life).  would recommend making sure you get a stable mix of all of them running (might take time, all part of the fun!), including changing level lists (so that modded clothes and armor will be distributed around the world/npcs; means you find new armors /weapons etc in course of playing - more immersive) and then start your new game.  skyrim beautification project can give ideas on some of those.
