Big issue with that is you don't know which error messages are handled and which aren't but it's a start. Remember just because a mod throws lots of errors doesn't mean theirs an issue with it.

When you run Skyrim using SKSE, it generates a log. See more info here.

Does SKSE provide logs only for the game's startup?

I wanted logs while I am actually playing the game. Or is there no such thing?

Depends. As an example, using SKSE with Memory Blocks Log allows you to check your memory CTD limit, so it is generated in game progress. As far as I know SKSE alone generates a log that allows you to see only if there is any problem launching the game.

What specifically you need to log? Memory?

I need to know why sometimes the game crashes while I open a door or the reason behind game crashing while loading.

Bethesda chose not to enable tracing on the exe which is very unfortunate, neither does Skyrim write dmp.logs.

To see issues with mods etc, enable logging: http://www.creationkit.com/FAQ:_My_Script_Doesn%27t_Work!#General

Perhaps tesv.exe crashes are logged in the system logs(windows) I haven't had Skyrim crash on me (yet) so I don't know, but have a look.
