I don't have a strict source, but if you look at the history of ESRB ratings, any time a game involves violence towards minors it is immediately shot to M. That's why most games that include minors make them invincible, or just don't include minors at all. The ESRB is very cautious about content involving harm to children, and such depictions would almost always result in an M or AO rating, depending on the intensity and context. Aging up characters to adults (even if they were originally minors) is a common way for developers to maintain/lower rating while still including combat or violence. This allows the game to avoid the ethical and regulatory concerns associated with depicting harm to minors. 2
