Could someone help me understand attractiveness system?

Hi there guys, i have a question or two about this awesome part of this awesome mod. I see that there are two sets of options when selecting your or NPC sim, it is select preferences and generate... what's the difference?

 

Also, is it possible to set one specific sim as template for extremely attractive and other's being judged upon that? And if so, how?

Generate will produce random likes and dislikes....select lets you chose the sims likes etc...likes teens and young adults...dislikes adults and elders etc....
