Armor Modification Question

Hello all,

 

I'm looking for a good way to modify an existing piece of armor.  Specifically, how would you remove a portion of armor?  For instance, let us say you have a piece of armor with leggings under a metal thong connected to greeves?  I'd like to remove the leggings, so only the greeves and thong remain and the legs of the NPC show through.  I know from experience that simply erasing the texture for the leggings just results in white leggings.  Aside from replacing the legging texture with a bare leg texture, how would one remove the actual leggings?  I've even tried removing the mesh underneath, yet still have white leggings afterward.
