The vanilla version of VX stores some of the items in the folders TheKlub17\VX-Mod\Images\Q=Tex032M\Luder\GUI. I use a different custom GUI that's been placed in my Addons folder so I'm not sure if the lettering on your image is an overlay or part of the texture, but the folder structures should be the same for the files. Your other option is to unpack the Archives/2.158.001/Images zip to get the vanilla versions that are stored there, but that shouldn't be necessary as the VX-Mod files take priority. Several people have made different GUI variants to replace the vanilla textures; you could download one of them to get the file structure and replace their images with your own.
