Haven't modded Skyrim in a very long time. What guide(s) should I use, whats safe to ignore?

I'd normally find a Q/A thread to put this in since I don't think it deserves a thread of it's own, but I couldn't find one so here we go...

 

So I want to get back into modded Skyrim after 5+ years, and am reading threads on what mods I need and all that, and I am *completely* overwhelmed. I can follow a guide easy enough, but there's so many guides about so many subjects I'm not too sure which to follow, which to ignore, which I need to do before which, etc etc etc.

 

I don't know if I should just use one of these, or start with one then move to another to add more of what I want, or if that'll have conflicts in it... I dunno, it's just a LOT to try and wrap your head around when you haven't done any of this in half a decade.

 

I've currently got the "Skyrim SE for Beginners" from LoversLab open, which has an insane amount of work involved in it, but not only does it say it's not compatible with the current update, it's also 6+ pages of work, so I don't want to start it if it won't work anyways.

 

So... Is there a specific guide or modlist or something I should follow? I just want smexy functionality, with the ability to add custom followers and other stuff down the line if I find something I like.

I don't expect you guys to give me specific mods to get and in what order or anything, I just want to know what guide(s) I need to read and what I can ignore to get myself started.

but use this page for download links for things like jcontainers and other skse plugin mods, the AE update (you have it's exe even if you did not buy that pack of cc crap) seriously fucked things up:
