So, if I check the "Random" option and I have several dialogues then one of the dialogues will be chosen randomly. But what does "Random End" do?

Basically you mark all the random options with Random, and the last one of those options with Random End. Say you have three dialogues, mark one and two Random, third as Random End. This is optional I think and just there so you can prevent fallthrough to other dialogues. Bethesda Tutorial Advanced Dialogue - Creation Kit
