For example, I'd like to be able to take an interaction that uses M+F and have the male sim do the F animation and the female sim do the M animation (but only for this specific sex interaction).

There are a lot of great interactions that use a female dom and male sub, but I want to permanently reverse it so that the male is dom and female is sub in these interactions.
