I had this problem and fixed it by uninstalling Bad Dog's Immersive Creatures, Animal SOS and More Nasty Critters.  Renstalled MNC first.  Then reinstalled Animal SOS and BDIC telling both NOT to overwrite skeever/white skeever assets.  The gryphons are simply beautiful.   You might have other mods that modify the skeevers and will have to uninstall them, reinstall MNC, then tell the mod manager when installing subsequent mods NO when prompted to overwrite the skeever's files.
