Werewolves aren't vanilla, so you'll have to find a mod that fixes the lack of bits, or do it yourself. Mesh replacements don't show up on load lists, since they just load in lieu of normal meshes. Â You also can't just drag and drop them into your data folder, you'll need to make sure that the right file goes to the right place. I know horses are in data/meshes/creatures/horse. I don't know where the werewolf files will be, since it depends on which mod you use. Mine's in meshes/DAwerewolf, though.
