Is there any way to mess with the camera during an actual fight (while playing) ? Zoom in, out ? Or just in spectator mode ?

Nope, but assigning keyboard keys or mouse to zoom in/out, like that other mod that assigns slow motion to F4, should be possible. I thought there was some mod of that sort. Would be fun using during free training mode. Dragging the camera 360 degrees with mouse, zooming in/out w/ mouse wheel and a key to reset the camera to default state. That would be very crazy.
