Gender Swap Compatability Question

So I've been hesitant to install sexlab hormones because of 2 reasons
1. being unable to disable the health, magica, stamina, changes that depend on sex (but that is not why i'm making this topic)

 

2. the worry that i may break certain quest by starting as a male and turning female during the middle of the quest

 

so my questing is how legit are those worries do other mods like sexlab sexslave, slaverun, or milkmod break when this happens, or is it safe to swap?
