Safest way to change race/gender?

What's the safest way to change your character's gender and/or race in mid-playthrough?  I've looked around and known there is the racemenu console command and found a couple of mods like this one.

But I also hear about how some of these methods are a bit buggy and don't always let you keep your stats when you make the change.  What's the least glitchiest method known?

i usually just use /showracemenu with Racemenu installed.

it may bug out, but you can try it with a fresh character to give it a shot.
