ive had this issue for quite some time now, i want to craft some ebony armor and weapons but they dont show up. its same for dwarven, orcish, and daedric weapons and armors as well. is there some kind of fix for this issue?

Are you talking about vanilla armors or armors added by a mod that belong to that category? Some armor mods require you have relevant smithing perks to unlock the abilities to craft them, some don't.

If you have all the smithing perks and the items are still grayed out in the smithing menu, then your skyrim most likely is NOT up to date.

or do you have a mod like Morrowloot that stops you from crafting armors above a certian material?

if not, do you have the required perks to make the armor normally?

well thats why then, might want to go and re-read the discription page for it. there was a version for it that allowed the crafting i think.

you'll have to go find that gear then, in the world somewhere. i've never used it or i would give ya some hints on where to look.
