it's interesting, actually

 

physiology of vault dwellers should have been preferentially selected for slim bodies, people who ate less than the combatant cohort, so naturally their descendants would also have "stick limbs" for several generations at least, after leaving the vaults

 

but the farmers you run into aren't really built for the work

Maybe. But that would add a criterion for a given vault that had nothing to do with the "experiment" the vault was set up to run. That would make it harder to find appropriate denizens matching the desired criteria. In those cases where the vault was set up to run a long-term experiment based on certain criteria and not just, say, freeze them the instant they stepped into the vault. And in that particular case, since the residents were going to be in a coma, the level of food they would require would be irrelevant.
