Long time away from Skyrim - Need Advice

I did some poking around here and it seems like a lot has changed.

Firstly, my Skyrim is via Steam. 
I see that it is suggested to turn of auto updates, but when I try to do that on Steam the drop down doesn't work.

Also, I see there is some disagreement with which version to play with. 
I like fancy stuff, hair, clothing, pretty environments and player housing. So, I am not sure which version is best for me at present.
I did read the Beginners Guide for SE, and notice that the current mod order/list says it is not working due to a recent update (I am guessing to the base game via Steam or Bethesda) 

It has been forever since I played or installed mods. 
If anyone has advice on which version I should play, and a stable mod list - in order with all the best stuff (minus animal sexytime mods), I'd be super grateful to see it and take suggestions. 

Also, if anyone knows or has a good tutorial on how to clean my entire computer of previous mods so that nothing gets botched that would also be fab.

I think there are some pretty good guides on the sse nexus that give step by step instructions.
