I've always used FNIS and I am comfortable with it, but I've seen people speak for Nemesis as the preferred behaviour generator. Which one is better? Would I get better performance or more stability with Nemesis? Pros and Cons with each?

You use Nemesis if any of the mods you use requires the patching Nemesis does (usually combat or movement overhauls).

You use FNIS if any of the mods you use requires creature animation support (aka bestiality).

These are the highlights for each one. And if you really need to use both mods requiring Nemesis and FNIS you can use both with some setup. But if you don't even know if you need Nemesis then you don't need it, keep using FNIS. And if you don't use bestiality mods you could switch to Nemesis with minimal effort and everything should work the same. You won't gain anything just because you do it though.
