Here's a personal favorite of mine:

 

 

Baking Powder Biscuits

 


Preheat oven to 450 degrees Fahrenheit

2 cups flour (NOT the self rising kind)

1 tablespoon baking powder

1 tsp salt

1/3 cup shortening

1 cup milk

Put flour, baking powder, milk and salt into a large bowl.  Add and cut in shortening. Add the milk and stir.  Looking for well mixed with thick consistency that sticks readily to mixing utensil (I use a fork).

For "Drop" version, drop 1/4 cup more or less onto un-greased cookie sheet

For more "confined" version, drop into un-greased muffin tins.

Bake 12-15 minutes until points are just starting to darken.  I prefer them lightly done as they tend to harden when given even the slightest bit too much time.

This recipe makes about 12, or one muffin tin's worth.  I always double it, and they still don't last long.  They're good both right out of the oven and a day or so old (assuming they last that long).  Butter and jelly go very well with these.
