I believe the from animation point of view this needs to be readjusted as the saddle where you sit e.g. girl need to be in the positive direction if two girls positioned in such way that e.g. one of them is standing and the other is in bent over position holding the girl in front from hips.

I don't quite understand what you're saying, but I already did this:
My rigging is very sloppy, but their knees bent in the correct directions somehow and their ankles still functioned as well! The hip on the front one (the horse's shoulder) just needed to be rigged properly. I just did a lazy job because I was testing and not serious about making any of these well.
