I believe the from animation point of view this needs to be readjusted as the saddle where you sit e.g. girl need to be in the positive direction if two girls positioned in such way that e.g. one of them is standing and the other is in bent over position holding the girl in front from hips.

I don't quite understand what you're saying, but I already did this:
My rigging is very sloppy, but their knees bent in the correct directions somehow and their ankles still functioned as well! The hip on the front one (the horse's shoulder) just needed to be rigged properly. I just did a lazy job because I was testing and not serious about making any of these well.

Is there a possibility that boar-riding Rielkings use human women—or women of other races—as mounts? Or even a scenario where a female player character is used as a mount by a Rielking?

i know there is a mod called NPC Mounts that allows you to ride any NPC by editing it with SSEEdit (i think) and adding a tag to it. the only downside is that it doesn't work in VR. the only thing that happens is you get stuck in the floor and can't move but can still control the NPC. and you also can't dismount
