Use mask tool. When you copy bones, new weights applying only for unmasked areas.

For example:

1) Load body as reference, load your outfit. Copy bones. Save.

2) Load head as reference, load your new file. Right click on outfit in right column, "mask weighted vertices", copy bones again. Masked area will be unaffected by new weights, save again.

But for better result you should add mask on hood by yourself in step 1), or weight transition will be really bad.

I got an issue now : I have a weird deformation in the hood. like it's cut in half.  Here are the screenies of the bones I set . May I ask your help again, please ? Or anybody who would have an idea ?

As I said, bad transitions. Check other bones (from upper body, for example).

Try to use "smooth" on all weird transitions - in paint mode, press shift and move brush around. But increase brush intensity first (spacebar).
