I can find human meat and hearts, but no mer parts. They must leave something behind; otherwise, what would Bosmer eat?

 

This is why the Altmer at Namira's banquet were segregated to the far end of the table. They may get invited to the anthrophage parties, but everyone knows they aren't real cannibals.

It would've been called something like "I Can't Believe It's Not Human Meat!" anyway. A real time saver. Clever, really. They're not like different in terms of alchemy. Aesthetics maybe. Maybe. Just a bit. Or something.

Isn't not just aesthetics, it's the principle! Mer can eat man, why can't man eat mer? I can do it in beast form, but I expect everything tastes different to wolves; they go for the nutrient rich innards that people tend not to try, and leave the parts we would slice off to cook for the scavengers.
